Usually, there are two types of electrodes, ignition electrodes and flame sensing electrodes (also known as an ionisation electrode)
The ignition electrode is responsible for making the spark that begins combustion.
The flame sensing electrodes are responsible for checking if there is a flame present in the burner.
This is an important task and if the flame is not detected the boiler knows to re-attempt ignition.
